Ingredients:

18 Prepared Mini Pie Shells
½ cup Raisins
½ cup Dark Brown Sugar
½ cup Corn Syrup
1 Egg
2 TBSP Butter, softened
1 tsp Maple Extract
1 tsp Vinegar
pinch Salt

Directions:

• Preheat oven to 350°.
• Line a baking sheet with parchment paper.
• Place the mini pie shells on the parchment lined baking sheet.
• Sprinkle a pinch of raisins in each mini pie shell; set aside.
• In a bowl, combine brown sugar, corn syrup, egg, butter, maple extract, vinegar, and salt; mix well.
• Scoop the sweet filling by the tablespoon full into the mini shells. Fill until almost full.
• Bake at 350° for approximately 12 minutes or until the mixture looks darker and the shell has browned.
• Remove from the oven and let cool for approximately 30 minutes before eating.

Butter Tarts are a classic sweet treat in Canada. We get them commercially prepacked in my area of New York State (being on the border and all), but nothing beats “homemade”. If you have never tried butter tarts, you are missing out on a real culinary delight. You will definitely want to make these today!

Because these begin with a prepackaged mini tart shell, they are super simple to make! Cheater butter tarts if you will (you can make your own crust if you really want to.

Gingerbread Coffeecake Recipe

This Gingerbread Coffeecake topped with a ginger glaze icing is a great way to cap off a winter meal or start the day with a good cup of coffee. The cake is lightly sweetened and has a delicious spiciness to it; an easy way to get your gingerbread fix!

Total Time: 1 Hour

Gingerbread Coffee Cake Ingredients:

3 cups All-purpose Flour
2 tsp Ground Ginger
1 tsp Ground Cinnamon
½ tsp Ground Nutmeg
1 tsp Baking Soda
½ tsp Salt
½ tsp Baking Powder
1 Egg
¾ cup Dark Molasses
¾ cup Applesauce
½ cup Milk
⅓ cup Brown Sugar
8 TBSP Unsalted Butter, softened (1 stick)

Gingerbread Coffee Cake Icing Ingredients:

1 cup Powdered Sugar
½ tsp Ground Ginger
¼ tsp Ground Nutmeg
2 TBSP Milk

Directions:

• Preheat oven to 350°.
• Grease and flour 1 large loaf pan (9 x 5 x 3″).
• In a large mixing bowl combine all-purpose flour, ginger, cinnamon, nutmeg, baking soda, salt and baking powder.
• In the bowl of your stand mixer place egg, molasses, applesauce, milk and brown sugar; mix until well combined.
• Slowly incorporate flour mixture into wet mixture until just combined.
• Mix in one stick of softened butter; combine well.
• Pour batter into prepared loaf pan.
• Bake for 40 to 45 minutes at 350° until top is golden brown and if you insert a toothpick in the center it comes out clean.
• Allow gingerbread coffee cake to cool completely.
• To make the Icing:
• Place powdered sugar, nutmeg, and ginger in a small bowl.
• Slowly incorporate milk, a teaspoon or two at a time until the consistency is fluid but not overly runny.
• Pour over the top of the gingerbread coffeecake, and allow to set.
• Slice, serve, and enjoy!

• You can use one large loaf pan (9 x 5 x 3″) which typically holds 8 cups, or two smaller loaf pans (8″ x 4 x 2½”) which typically hold 4 cups (so 4x 2 = 8).

Irish Cream Fudge Recipe

This yummy Irish cream fudge recipe is a decadent treat well worth the calorie splurge! Irish cream and coffee is a delicious flavor combination – add in chocolate and marshmallow and this fudge recipe is a real winner for the holidays, get-together or as a special treat.

Prep Time: 15 minutes
Cook Time: 10 Minutes
Total Time: 1 Hour 25 minutes

Ingredients:

3 cups Sugar
1 TBSP Instant Coffee Granules
¾ cup Butter (1 ½ sticks)
7 oz Marshmallow Cream
½ cup Evaporated Milk
8 oz White Chocolate Chips
½ cup Irish Cream Liqueur
2 tsp Vanilla Extract

Directions:

• Line an 8″x8″ pan with aluminum foil, you can also use a 9″X12″ pan but your fudge will be much thinner. Set aside.
• In a large saucepan over medium-high heat combine sugar, coffee granules, butter, marshmallow cream, and evaporated milk; stir frequently until boiling. Boil for 5 minutes.
• Remove mixture from heat and stir in white chocolate chips, Irish cream liqueur, and vanilla extract. Stir for another 5 minutes until everything is melted and smooth.
• Pour into prepared pan.
• Place in refrigerator to set; approximately one hour.
• Slice into small squares as this dessert is very rich!

Notes: Sometimes for whatever reason, my fudge refuses to set; perhaps I did not let it boil long enough or maybe it is the humidity/temperature of my kitchen. If this happens to you here are a couple ideas to save your fudge:
• Return fudge to pan and heat again, add a bit more evaporated milk and add a few more white chocolate chips, stir well, pour into a pan to set.
• Stir in half a cup or more of powdered sugar to fudge that has been reheated back in the pan.
