Stackable Christmas Tree Cookies Recipe

Ingredients:

1½ cups Unsalted Butter, softened
1½ cups Sugar
1½ tsp Almond Extract
1½ tsp Vanilla Extract
2 Large Eggs
Green Food Coloring
½ tsp Salt
4½ cups All-purpose Flour
12 Yellow M&Ms
3oz Candy Cane Sprinkles
3oz Christmas Sprinkles
8oz Green Icing

Directions:

• Preheat oven to 325°.
• Line two baking sheets with parchment paper.
• Using a stand mixer or hand mixer, beat butter and sugar together for 2-3 minutes
• Add almond extract, vanilla extract, eggs, and a few drops of green food coloring; mix well
• Mix in salt.
• Add in flour one cup at a time; mix well.
• Knead the dough in your palms until it starts sticking together in a ball.
• On a flat surface, lay down a piece of parchment paper; lightly flour your parchment paper and rolling pin and roll your dough out to a thick 1/4″ to prevent the dough from cracking.
• Using star cookie cutters cut out: 2 large stars, 2 medium sized, and 1 small per cookie
• Use your remaining dough to roll quarter sized pieces to little cones to form the top of the tree.
• Move your dough to your baking sheet and bake for 10 minutes.
• Remove from oven to a cookie rack, allow to cool.
• To assemble cookie trees:
• Place a small amount of frosting in the center of a large star then stack another large star on top, making sure the points of the stars go in different directions
• Next place a small amount of frosting onto the center of the second large star and place medium sized one on top making certain the points of the star go in a different direction.
• Then repeat that step with another medium star, one small star, and a small cone on top.
• Dab your tree with lots of tiny dots of frosting and stick your candy cane sprinkles onto the frosting.
• Then spread a very thin layer of frosting all over the tree and top with your colorful sprinkles
• Add a dab of frosting to the bottom of a yellow M&M’s and place on top of your tree.

You may have seen these stackable Christmas cookies – also called stack cookies or 3-D cookies – as really really tall, brown cookie trees with white icing on the ends to reflect snow. And they are lovely! But how about cutely decorated “Christmas” trees in green with lots of frosting and sprinkles meant to be eaten by one person (or two people if you are feeling generous!)?

That is these cookies, but different. These stackable christmas tree cookies are also from scratch as opposed to a prepared refrigerated dough – not that there is anything wrong with that! Especially if you like gingerbread and want brown trees. There is definitely a place for quick store bought dough (heck this tutorial uses icing from a can!). However, to save on costs, these from scratch cookies are a bit more economical.

Also, if you would like to make your own frosting (especially if you are making more Christmas Cookies!) try this Classic Vanilla Buttercream Frosting Recipe and tint a portion of the frosting green!

If you would like to sugar the ends to look like snow, use decorators sugar, or make your own colored sugar! It is simple to do (really! My mother had me making it a 5!!!)

Hungarian Christmas Cookies Recipe

These traditional Hungarian Christmas Cookies from nagyanya (grandma) are simply delicious. Each bite reminds you of the old country; a time of good food and fond memories. If you are looking for old-fashioned Christmas cookies, try this Hungarian Christmas Cookies Recipe!

Ingredients:

3 cups All-purpose Flour
16 TBSP Butter (½ pound or 2 sticks)
1 packet Rapid Rise Yeast (¼ oz envelope)
2 TBSP Sugar
1 tsp Vanilla Extract
½ cup Light Cream
3 Egg Yolks
1 cup Powdered Sugar

Date Filling Ingredients:

2 cups Dates, stoned and cut
½ cup Sugar
¾ cup Water
¼ tsp Salt
1 tsp Vanilla
¼ cup Ground Walnuts

Nut Filling Ingredients:

1lb Ground Walnuts
¼ cup Sugar
2 TBSP Milk (plus more as needed)

Directions:

• Preheat oven to 325°.
• For dough:
• Using a stand mixer, mix together all-purpose flour and butter; cream together.
• In a medium bowl, add 1 packet of rapid rise yeast and 2 tablespoons of sugar; allow to soften.
• Add 1 teaspoon vanilla, ½ cup light cream and 3 egg yolks to the yeast mixture; mix together well.
• Add the yeast mixture to the flour mixture; mix well until a dough is formed.
• Place dough on a board, cut in half.
• Cut each half of the dough into 3 pieces.
• Roll each piece into a small ball.
• Place a small amount of powdered sugar on the board, and roll out a small ball into a thin, round shape.
• Cut pieces like you were cutting a pie, 8 pieces from each ball.
• Place 1 teaspoon of filling on the dough spread out.
• Bake in preheated 325° oven for 20 minutes or until slightly brown at the edges.
• Roll in powdered sugar.
• Allow to cool.
• Store in a container lined with waxed paper.
• Date Filling directions:
• In a pot on the stove, combine stoned and cut dates, ½ cup sugar, and ¾ cup water. Cook for 10 minutes.
• Cool mixture and then add ¼ tsp and 1 teaspoon of vanilla; mix well.
• Add ¼ cup ground walnuts; mix well.
• Nut Filling directions:
• Combine 1 pound of shelled and ground walnuts with ¼ cup sugar; mix well.
• Add 1 tablespoon of milk, mix, add a second tablespoon of milk, mix. You want this moist, not wet. You may need more or less milk than what is listed.

My soon-to-be sister-in-law, Shelly, is an excellent baker and cook. When she brought these over for Christmas Eve, I knew I simply had to have the recipe to share! And since Shelly is such a good sport, she gave it to me and allowed me to share with all of you.

These Hungarian Christmas Cookies are simply delicious. Shelly said they are quick to make too, the prep time being only 30 minutes (for Christmas cookies, that is fast!). If you like traditional Christmas cookies, give these a go!

Eggnog Kaleidoscope Jello Recipe

An easy to make, festive Eggnog Kaleidoscope Jello Recipe is perfect for a holiday dinner dessert or side dish. This old-fashioned recipe dates back over 35 years! Your entire family will love it.

Total Time: 7 Hours 30 minutes

Ingredients:

1 3oz box Cherry Gelatin
1 3oz box Lime Gelatin
1 3oz box Lemon Gelatin
5¼ cups Water, divided
¾ cup Commercial Eggnog
2 TBSP Rum (or use ¼ tsp rum extract)
2 cups Cool Whip, thawed

Directions:

• Separately prepare the cherry and lime gelatins as directed on package, but reduce the code water for each one to ½ cup.
• Pour the cherry gelatin into a 8″x8″x2″ baking pan, chill until firm, at least 3 hours.
• Pour the lime gelatin into a 8″x8″x2″ baking pan, chill until firm, at least 3 hours.
• Dissolve lemon gelatin in ¾ cup boiling water; add rum and eggnog. Chill until thickened (not firm).
• Cut firm cherry and lime gelatin into ½” x ½” cubes. Measure out ½ cup of each flavor and set these gelatin cubes aside to use as garnish.
• Blend whipped topping into the thickened eggnog gelatin.
• Fold in gelatin cubes that are not set aside for garnish.
• Spoon gelatin mixture into silicone mold.
• Chill until firm, at least 4 hours.
• Un-mold onto a serving dish.
• Garnish with reserved gelatin cubes.

Many years ago when I was grocery shopping, Jello was giving away plastic star or bell molds when you purchased xx packages of Jello. I decided to do the deal, and picked up a star. There was also a recipe booklet.

Inside that recipe booklet was a Kaleidoscope Dessert recipe. I made that dessert for 10+ years, every year to take to Christmas dinner at my parent’s house. Everyone loved it!!

At some point (probably during a move) that star mold got lost. But I kept the recipe.

Last year at Christmas dinner I decided to make this dessert again (I served it as a side dish actually), and bought another star mold online. Silicone Star on Amazon – I “think” this is the same one on Ali Express – first time I had made this in a good 15 years! And it was still wonderful. (While I have never tried it, I am sure any large silicone mold will work.)

• Note: You can use the extra cubes as garnish if you like. I usually do, but for some reason they did not make the photos.

• 1 3oz box Cherry Gelatin
