If you like sweet treats – well, these Hello Dolly Bars are it. My MIL makes them for mu husband and ships him a tin for the holidays every year. He is thrilled! If he had his way, they would be a weekly shipment. SMH One thing Hubby definitely has is a sweet tooth.

When my Grandmother made them she cut them into bite sized pieces. I am not sure if that was good or bad. Good in that we could have a small taste, bad in that they were so small we could quickly lose track of how many we ate.

• 1½ cups Graham Cracker Crumbs
• 8 TBSP Butter, melted (1 stick)
• 1 (14oz) can Sweetened Condensed Milk
• 1½ cups Semi-Sweet Chocolate Chips
• 1 cup Baking Chips (butterscotch, white, caramel, etc – just not semi-sweet)
• 1 1/3 cups Flaked Coconut
• 1 cup chopped Pecans

Ingredients:

1½ cups Graham Cracker Crumbs
8 TBSP Butter, melted (1 stick)
14oz Sweetened Condensed Milk (1 can)
1½ cups Semi-Sweet Chocolate Chips
1 cup Baking Chips
1 1/3 cups Flaked Coconut (butterscotch, white, caramel, etc – just not semi-sweet)
1 cup chopped Pecans

Directions:

• Preheat Oven to 325°.
• Spray the bottom of a glass 13″x9″ pan with non-stick spray.

• Bake for 30 minutes at 325° or until lightly browned.

This is a basic shortbread cookie recipe. It uses only 4-ingredients but is so rich as to be almost decadent. It will melt in your mouth. Cookie recipes do not get easier than this one!

If you form a large circle, you can do it inside a tart pan or without a pan. Make certain your cut your cookies before you bake!! This will allow them to come apart cleanly. You can use a square pan too, but again, cut before baking.

You do not have to make this as one large cookie. You can form or shape your shortbread into cookies, stamp them with a cookie press, use a cookie cutter, etc. The butter spreads though, so be aware of this.

  1. In a mixing bowl using a stand mixer, use the paddle mixer attachment to cream together 16 tablespoons of butter (2 sticks) and ¼ cup confectioners sugar.
  2. Combine 2 cups all-purpose flour and a dash of salt in a separate bowl.
  3. Gradually add flour mixture into butter mixture on low speed. It will eventually come together.
  4. Turn shortbread dough out onto counter and form a ball.
  5. Cover the entire ball of dough with plastic wrap and refrigerate to chill overnight.
  6. Remove the chilled shortbread dough ball from refrigerator and allow to sit on counter for at least 15 minutes before rolling and cutting.
  7. Preheat oven to 350°.
  8. Roll out dough to 3/8" thick and cut into shapes, bars or wedges or pat in a spring-form or tart pan at ½" – ¾" thick. (cut before baking!)
  9. Bake for 15 minutes at 350°
  10. Reduce heat to 300° and bake for another 15-20 minutes or until light golden brown around the edges.
  11. Cool on a wire rack.
  12. Store in an air tight container.
