Bread Pudding Recipe


One day, after a bakery outlet shop, we discovered we had a lot of leftover breads and sweets, so Hubby decided to put them to good use in a Bread Pudding! My advice: don’t use bagels or anything so soft it will turn mushy.

Bread Pudding Recipe

Ingredients

• 6 cups cubed sweet breads or rolls
• 1 cup half and half
• 3/4 cup sour cream
• 4 large egg yolks
• 1/4 cup milk
• 1 cup sugar
• 2 tsp vanilla extract
• 2 tsp grated orange zest
• 1 1/2 tsp ground cinnamon

Directions

• Cut pastry into cubes, set aside.

• Wisk together all ingredients except cut up pastry.

• Fold pastry into whisked ingredients.
• Cover the bowl and refrigerate overnight.

The next day:
• Preheat oven to 325º
• On the middle rack of the over, while preheating, place a roasting pan.
• Butter 9″ round pan, line the bottom with a disc of parchment paper.
• Fill the 9″ round with the pudding mixture.
• Place pudding-filled 9″ round into the roasting pan that is in the oven. Add enough warm water to the larger roasting pan so it comes up about an inch all around the 9″ round.
• Bake pudding until set, approximately 1 hour 15 minutes.

• Lift the pudding pan from the water and set on a rack to cool.
• Turn out onto plate after partially cooled, removing parchment paper.
• Sever in wedged topped with whipped topping.
• Refrigerate leftovers.

Gooey Bars Recipe

Ooey Gooey delicious goodness! Try these fabulous Gooey Bars for dessert. Your entire family will love them!

Prep Time: 20 Minutes
Cook time: 45 Minutes

Ingredients Crust:

1 box Yellow Cake Mix
8 TBSP Butter, melted
1 large Egg
1 cup Chopped Pecans
1 cup Shredded Coconut

Ingredients Filling:

8 oz Cream Cheese, room temperature
2 large Eggs
1 tsp Vanilla Extract
8 TBSP Butter, melted
3¾ cups Confectioners Sugar, sifted

Directions:

• Preheat oven to 350º
• In a large mixing bowl combine all crust ingredients: cake mix, melted butter, egg, pecans and coconut.
• Blend with an electric mixer on low speed for 2 minutes. Batter should ball up.
• Take batter ball and fingertip-pat evenly into an ungreased 13″×9″ pan.
• To make the filling, place the cream cheese in the same mixing bowl that was used to make the crust, and with the same beaters blend with an electric mixer on low speed until fluffy.
• Add eggs, vanilla and melted butter and beat on medium speed for 1 minute.
• Add confectioners sugar. Beat on medium speed until the sugar is thoroughly mixed in.
• Pour filling onto the crust and spread with the rubber spatula covering entire crust surface.
• Place on middle rack in oven, bake for 45-50 minutes at 350º.
• Bars are done when toothpick comes out clean.
• Cool bars in pan on wire rack, cut into squares, serve while warm.

Hubby was in Joliet Illinois last year (this was originally written on my old blog in 2011) and went to the Paula Dean restaurant there (it has since closed). He was so thrilled with the gooey cake served at the restaurant, he decided to find a recipe online and replicate it. This is what he ended up with.

A few things – hubby is a great cook, but he isn’t a baker – and yet these turned out very well. He baked this long enough that these thickened to bars which was great for ease of eating.

Strawberry Rhubarb Crisp Recipe

This Strawberry Rhubarb Crisp Recipe is really, really good. The brown sugar almost caramelizes (there is a lot of butter in this recipe!) and forms a wonderful topping with the oats. You could actually use granola instead of rolled oats to give a sweeter taste (granola was used in these photos).

It is very easy to make. Just make sure to use a pastry cutter (blender) to blend the dry ingredients together with the butter.

Strawberry Rhubarb Crisp Ingredients:

• 1 1/3 cups Flour, divided
• 1 cup packed Brown Sugar
• ¾ lb Butter, sliced
• 1 cup Granola (or rolled oats)
• 1 cup White Sugar
• 4 cups Strawberries, hulled and sliced
• 3 cups Rhubarb, diced

Strawberry Rhubarb Crisp Mise en Place:

• 2 Large Bowls
• Spatula
• Paring Knife
Pastry Blender (cutter)
13″ x 9″ Baking Dish
• Nonstick Spray

Strawberry Rhubarb Crisp Directions:

• Preheat oven to 375º.
• Lightly spray a 13″ x 9″ baking dish with nonstick spray. Set aside.
• In a large bowl combine granola (or oats), butter, brown sugar and 1 cup flour until crumbly. A pastry cutter (blender) works well for this task. Set aside.
