My good friend Tamona told me about this drink called a Painkiller that was very tasty, and used my favorite hard liquor: rum! It comes from Cheddars (which I had never heard of), and Tamona told me they have a strict limit of two per person.

Sounded right up my alley!

This is such a simple cocktail, yet it tastes so darned good! It will sneak up on you if you have more than a few as it just tastes so delightful.

I finally got to Cheddars about 10 years after Tamona gave me this recipe. While there, I simply had to order a Painkiller!! I was curious at how it differed, and if her copycat recipe was “correct”.

There it is right in the menu – limit of TWO!

The main difference is the they rimmed with toasted coconut. Their garnish was a slice of pineapple, as well as the nutmeg.

Honestly? This recipe Tamona gave me – with the small noted tweak – is below. It is simply fabulous. The Cheddar’s painkiller went down very easily, but I didn’t care for the rimming. If you like toasted coconut, give it a go!

I changed the alcohol ingredient from dark rum to white rum and used this recipe:

• 2 oz White Rum
• 1 oz Cream of Coconut
• 4 oz Pineapple Juice
• 1 oz Orange Juice
• Nutmeg for garnish

Cocktail Shaker
• Cocktail Glass

Painkiller Cocktail Directions

• Mix together white rum, cream of coconut, pineapple juice and orange juice in a beverage shaker.
• Shake well.
• Pour over ice into a tall glass.
• Top with nutmeg.
• Serve immediately.

Easy Chicken Bake Recipe

Of all my recipes, this is a top 5 favorite simply because it is so easy and delicious. Leftovers hold up, and this Easy Chicken Bake goes a long way when served with white rice. Easy, economical and tasty comfort food.

I put this together 30+ years ago – probably based on some other chicken and chicken soup recipe. I have mainly served this over white rice, but it is good with mashed potatoes too. A bit of bread completes the meal!

Notes:

• You can substitute frozen peas for the broccoli.
• You can add mushrooms too!
• Or mix up broccoli, peas, and mushrooms.
• Fresh broccoli works well if you have it (instead of the frozen).
• When this Chicken Bake recipe cooked, it forms a slight “crust” at the pan’s edge and will be bubbling. It is hot!
• The leftovers will keep for up to 2 days before the soup and milk start to separate.

Easy Chicken Bake Ingredients:

• 1½ lbs Chicken Breast, trimmed and cubed
• 1oz Onion Soup Mix (1 packet is fine)
• 10.5oz Condensed Cream of Chicken Soup (1 small can)
• 10.5oz Milk (fill the empty soup can)
• 8oz Sour Cream
• 10oz frozen Broccoli

Easy Chicken Bake Mise en Place:

• Bowl
• Spatula or Bowl
13″x9″ Baking Pan (this is 15 cups – it is more the spread)
• Cutting Board
• Knife
Measuring Cup
• Non-stick Spray

Easy Chicken Bake Instructions:

• Preheat oven to 350º
• Trim off fat from the fresh chicken breast (or defrosted frozen breast).
• Cube the chicken into bite-sized pieces.
• Combine cream of chicken soup, onion soup mix, milk (fill the empty soup container with milk and pour into a bowl), and sour cream; mix well.
• Pour soup mixture into lightly sprayed 13″x9″ pan.

• Add chicken (make sure you cover the chicken with the liquid mixture).

Do you like blackberries!? I love them! I grew thornless blackberry bushes for many years that produced such a wonderful yeild that I would make blackberry crisp, blackberry jam, blackberry margaritas… you name it, I would make a blackberry recipe. And of course, we always ate them fresh off the bush.

Blackberry Crisp Recipe Notes:

• This blackberry crisp recipe is really simple to make.

• You can use Muesli or Granola for the toppings. Quick oats could be used too, but won’t give as good a texture or taste-interest (well, in my opinion).

• This blackberry crisp can be served warm or cold, à la mode with ice cream, whipped cream, or just as is.

Blackberry Crisp Recipe Ingredients:

• 4 cups fresh Blackberries
• ½ cup White Sugar
• 2 TBSP Water
• 1 tsp Corn Starch
• 1 tsp Lemon Juice
• 1 cup Muesli
• 2 TBSP Flour
• ½ cup Brown Sugar
• 1 tsp Ground Cinnamon
• 10 TBSP Butter, divided

Blackberry Crisp Recipe Directions:

1. Preheat oven to 375°F.
2. Place 4 cups of fresh blackberries in a greased 3 qt Baking Dish.

6. Sprinkle muesli mixture over blackberries.
