
Blackberry Refrigerator Jam Recipe

This fast and easy blackberry refrigerator jam recipe is sugar free, pectin free, and totally delicious. This refrigerator jam can be made with practically any fresh berry. Make some today; your morning toast has never tasted so good!
Prep Time: 5 minutes
Cook time: 25 Minutes
Ingredients:
• 12 oz Blackberries
• 1 TBSP Lime Juice
• 1 tsp Sweetener (truvia, spenda, etc)
• 2 tsp Water
• 2 TBSP Chia Seeds (black or white)
Directions:
• Place berries in a saucepan over medium heat.
• Add lime juice, sweetener and water.
• Cook until mixture comes to a low boil and the fruit softens and breaks into pieces (macerate).
• Add the chia seeds and stir.
• Cook for 2 minutes; remove jam from heat and cover.
• Allow jam to cook in the pot, and then spoon into a jar. The jam will continue to thicken as it cools.
• Store the blackberry jam in the refrigerator for up to 6 days.

Note: you are not limited to blackberries with this recipe. Try other berries such as raspberries, strawberries and more! You may have to “help” a strawberry or blueberry breakdown by mashing it, but that is fine. It just speeds the process along.
This really is a very simple jam recipe that takes full advantage of fresh berries anytime of year!

Can I just say that this is brilliant?!? I never would have thought to use chia seeds as a thickener/in place of pectin. I have them with my breakfast every day, so they are a staple at my house. I can’t wait to go blackberry picking and make this. Thank you!
Stephanie, try it with raspberries, strawberries, etc too! Hubby is on a chia seed kick – you would probably love what he does, but some of it makes me go O_o .
