Spiced Cranberry Butternut Squash Recipe

Spice up your butternut squash with this delicious, easy to make cranberry and butternut squash recipe. A nice autumn side dish that perfect for pairing with pork, turkey or chicken.

Ingredients:

1 lb. Butternut Squash (sliced very thin or diced)
1 cup Dried Sweetened Cranberries
Hot Water
3 TBSP Butter
½ tsp Ground Cinnamon
½ tsp Sage Powder
1/8 tsp Dried Chili Flakes
¼ tsp Nutmeg

Directions:

• Put the cranberries into a bowl with hot water to soften. Set aside.
• Slice butternut squash very thin (or dice).
• Place the butternut squash into a pot filled with enough water to cover the squash, and cook until tender. Drain.
• In a small bowl, mix the spices in with the butter. Combine well to incorporate.
• Drain the cranberries and the butternut squash.
• Place the cranberries into a bowl with the squash.
• Mash the mixture together. Some cranberries may mash, some may not, this is good as it provides texture to the dish.
• Add the spiced butter mixture and stir to melt into the squash until its all combined and smooth.

Notes:

• When putting the mixture into the slow cooker, it should be moist enough so that you can pat it, much like a meatloaf, into the shape of the slow cooker bowl. If you prefer to leave your pork stuffing looser, do not form it.
• If you do form the pork stuffing into a shape by patting it down, you make the mixture denser, and you will be able to cut it like a wedge when serving, and top with a loose, prepared, cranberry sauce.

• 1 lb. Pork (chops/loin)
• 1 TBSP Butter
• ¼ Onion
• 2 ribs Celery
• Salt to taste
• Pepper to taste
• 1 box Stuffing Mix

Notes:

• This is only a portion for two people, so use a small slow cooker. If you want to make more – say for your entire family – double or triple the recipe (depending on how many servings you would like) and use a larger slow cooker.

• 1 Acorn Squash, large
• ½ cup Apple Juice (you can substitute water if you do not have apple juice)
• 2 tsp Cinnamon
• 2 TBSP Butter
• 2 TBSP Brown Sugar
• ¼ cup Walnut Pieces
• ¼ cup Maple Syrup (or as desired)
