Monster Eye Cookies Recipe

These delicious cookies start with a cake mix base so that takes the baking powder, rising, flat, yadda, yadda worries out of the equation and you end up with moist, plump cookies. A little doctoring of a cake mix can go a long way!

This is a pretty basic recipe. If you want to skip the eyes, you could choose different colors and make these for any season – colorful eggs + pink for Easter, red or green + sprinkles for Christmas, deep red + hearts for Valentine’s day, etc.

Monster Eye Cookies Notes:

• You can choose any food colors (or food gels) you like. If you are making these for Halloween or a Monster party some good color choices are green, orange, and purple (purple is an excellent food gel color as it will make it deep and vibrant). If you don’t have these colors, McCormick has an easy to understand food coloring color guide. Since you are dividing this dough into three sections, the cake mix colorants as listed will not work.
Orange – 17 drops yellow + 3 drops red
Neon Purple is a great color to use on these cookies.
Neon Green is a great color to use on these cookies.

• You can use one large eye centered in a green cookie for a Mike Wazowski look (who else loved Monsters, Inc?!?)

• The small and large eyes are a great staggered look. You can also do many small eyes only. The large eyes are best used sparingly when used alone, so one or three. You can use as many or as few eye candies on these cookies as you like to achieve the look and vibe that fits your event.

• Use parchment paper to line the bottom of your jelly roll pan – it will make the cake removal much easier.

• For my UK and Australian friends: confectioners sugar is icing sugar (powdered sugar, 10x).

• 8 TBSP Butter, softened
• 8oz Cream Cheese, softened
• 1 box White Cake Mix
• 1 large Egg
• ½ cup Confectioners Sugar
• Assorted Food Colors
• Small Candy Eyeballs
• Large Candy Eyeballs

1. Using a stand mixer, in a large bowl cream together 8 ounces of softened cream cheese and 8 tablespoons of butter (1 stick) till fluffy.

2. Add in 1 large egg and beat for another minute.

3. Add the white cake mix to the cream cheese mixture and mix well until fully incorporated.

4. If you are using just one color, add the color and mix in.
5. If you would like different colored cookies, divide the cookie dough in individual bowls and add your favorite color. I used neon food color. I used neon green, purple, and pink with a few drops of yellow to make orange.
6. Chill the cookie dough for 30 minutes (minimum) to 1 hour.

7. Preheat the oven to 350°F.

9. Using a cookie scoop, form balls of the cookie dough.
10. Place the ½ cup of confectioners sugar on a small plate or into a small bowl. Roll the dough balls in the confectioners sugar.

11. Place the dough ball on the prepared cookie sheet and flatten it a bit.
12. Bake for 10 to 12 minutes in preheated 350°F oven.

13. Press the candy eyeballs on the cookies while still warm. You can use as few or as many eyeball candies as you like.
