Homemade Everything Bread Recipe Directions:
1. Line a baking sheet with a piece of parchment paper and lightly spray with non-stick cooking spray.
2. In the bowl of your stand mixer, stir together the active dry yeast with ¾ cup warm water. Let it stand for 5 minutes to allow it time to bloom.
3. Separate the egg and set aside the egg white for now.
4. Add the egg yolk, warm milk, butter, sugar, salt, and 2 cups of flour to the yeast mixture in the bowl.
5. Use the dough hook and beat on medium speed until all the ingredients are mixed thoroughly.
6. While the mixer is on medium speed, add the remaining flour ½ a cup at a time until all the flour has been mixed in. Continue beating on medium speed for 4-5 minutes or until the dough forms a ball and completely pulls away from the side.
7. Transfer the dough to a lightly floured surface and knead the dough for 7-8 minutes. The dough will be soft and smooth.
8. Transfer the dough to a greased bowl. Cover with a towel and put in a dry, warm place for 60 minutes. The dough will double in size.
9. Once the dough has risen, punch down the dough.
10. Divide the dough into three (3) equal portions. You should have 30 ounces of dough, so you will end up with three (3) balls of dough, about 10 ounces each. Roll each dough portion on a lightly floured work surface into a rope about 10 inches long.
11. Once you have three (3) ropes, braid them together. Pinch both ends together.
12. Transfer the braid to your prepared baking sheet. Tuck each end under. Cover with a clean towel and place in a warm, dry place to rise for 30 minutes.
13. Once the braid has risen again (second rise), preheat the oven to 350 degrees Fahrenheit.
14. Combine the egg white with two (2) teaspoons of water.
15. In a small bowl, mix the sea salt, minced onion, sesame seeds, caraway seeds, and poppy seeds.
16. Brush the top of the dough with the egg white mixture, then liberally sprinkle the seed mixture over the top of the bread. The egg white mixture will make it stick to the bread.
17. Bake in a preheated 350°F oven for 25-30 minutes. The top of the bread will be a deep brown color, and the seams of the braid will be a light golden brown.
18. Remove from the oven and cool in the pan for 5 minutes before transferring the everything bread to a cooling rack to cool before slicing.
19. Store leftovers, covered in an airtight container or in a zipper bag, at room temperature for up to four (4) days.
