Melon Rum Cocktail Recipe

Notes:

• Cantaloupe was used as the garnish for this cocktail, but you can substitute honeydew melon instead.

• You can purchase Melon Peach Italian Soda in at Whole Foods. Torani Makes a flavored syrup, and you can add it to seltzer water in a pinch.

• If you prefer to not use pop, substitute 1 – 1½ ounces of Midori and/or 1 – 1½ of Peach Schnapps. This will make for a more potent drink though!! (ie do not plan on driving).

A delicious, cool and fun ice pop dessert and libation in one. These Mangoscato Popsicles are a special sweet and tasty treat for adults on a hot summer day!

Prep Time: 10 Minutes
Total Time: 1 hour, 10 minutes

Ingredients:

2 cups Mangoscato Wine
1 ½ cups Guava Nectar (Mango Nectar may be substituted)
2 TBSP Honey

Directions:

• In a large bowl add 2 cups Mangoscato, 1 ½ cups guava nectar and 2 tablespoons of honey; mix. Adjust flavor to your taste.
• Pour Mangoscato mixture to the fill line of each ice pop mold.
• Insert and secure cap and ice mold sticks.
• Freeze for an hour or longer.
• To serve: eat frozen pops, or – after Mangoscato popsicles have frozen, fill a wine glass halfway with crushed ice and add ½ cup of Mangoscato and 2 tablespoons of guava nectar (mango nectar may be substituted); stir.
• Add a Mangoscato popsicle and garnish with a slice of mango.
• Serve.

This sweet, fun and delicious cocktail is a wonderful party quencher. Whether sipping drinks by the pool, having cocktails with friends, or trying something new at a celebration, this fabulous Kiwi Rum Quencher will have everyone asking for more.

Prep Time: 3 minutes

Ingredients:

1 oz Rum
3 oz Pinot Grigio
2 TBSP Honey
Crushed Ice
1 Rosemary Sprig
2 Ripe Kiwi, sliced

Directions:

• In a cocktail shaker combine rum, Pinot Grigio, honey and crushed ice.
• Shake for 30 seconds.
• In a large mason-style glass layer sliced kiwis and crushed ice.
• Pour cocktail in a glass.
• Top with a few slices of sliced kiwi.
• Garnish with a fresh spring of rosemary.

When eating kiwi, best advice is to make sure they are ripe. Soft to the touch, yet not mushy, and no dark spots on the outer skin. Ever tried eating a hard kiwi? Blech. Talk about bitter!! Peel them close, or eat the skin (where a lot of the fiber is contained), as long as they are ripe, it is all good!

To ripen a kiwi, put it in a paper bag. Add an apple to the bag to aid in the ripening process. Hubby has done this “add an apple” trick to avocados, bananas as well as kiwis to ripen them. The apple gives off ethylene which ripen other fruits. You can store a kiwi in the fridge for up to 4 months and it will not ripen (as long as it isn’t near something giving off ethylene), so grab some when they are on sale, and save the kiwis for a delicious recipe… such as this Kiwi Rum Quencher!!
