The etymology of a s’mores suggests it is a contraction of “some more” as in “give me some more of that delicious chocolate–marshmallow-campfire-goodness!!”

As I mentioned a few weeks ago, my niece used to sell baked goods at local farmers markets, fairs, etc. These lovely little S’mores sold for a buck a pop! And they flew out the er, stall. I was flabbergasted. These are so simple to make, who would pay-up to buy one!? But, apparently, people did.

Notes:

• If you buy smoked salt, it will give a campfire flavor to the S’more pops.

• The marshmallows are cut in half, so they brûlée (to burn) nicely. If you do not plan on torching the marshmallows, there is no need to cut them in half.

• These are made with one-half of a giant marshmallow. Hubby said the only thing wrong with these is there was only one per stick. You could easily make these two, three or four halves on a stick, depending on how long your candy stick is (6″ or 8″).

Ingredients:

6 Jumbo Marshmallows
1 cup Melting Chocolate

So I must admit when my niece sent me this gluten-free, dairy-free, egg-free oatmeal crumble bars recipe my first reaction was, “Where’s the taste!?” I figured it must be fairly tasteless without all the “good stuff” I normally find in my baked goods. How could a baked good devoid of regular flour, dairy and eggs be tasty?

Well, I am happy to report these are outstanding!!

As I mentioned last week, my niece used to sell baked goods at local farmers markets, fairs, etc. My sister has celiac disease (she was diagnosed 7-8 years ago), so my niece was used to making gluten-free recipes and desserts. She frequently sold gluten-free at these markets (but could not guarantee gluten-free as it was not a gluten-free commercial kitchen where she baked). This recipe originally was a bit different and contained an egg white. At one of the local farmer’s markets, there was a little girl who always looked longingly at my niece’s baked goods, but the little girl has a lot of allergies, including eggs. So, my niece reworked this recipe (and reworked it and reworked it) so that it was not only gluten-free but egg-free and dairy-free as well. This is the finished product she sold for years.

Notes:

• Because there is not a lot of binder in this recipe, cool the bars completely before you attempt to cut them.

• You can use fruit other than the strawberries used in these photos. These are “fruit” bars, so strawberries, blueberries, raspberries, cherries, peaches, nectarines, apples, etc are all good fruit filling choices.

• If you use cherries as your fruit, add 1/8 teaspoon of nutmeg to the crust.

• If you use peaches as your fruit, add 1/3 cup light brown sugar to the crust.

• If you use apples as your fruit, add ½ teaspoon of cinnamon to the fruit mixture, and one teaspoon of cinnamon to the crust.

• The recipe is made using an 8″x8″ baking pan. If using a 9″x9″ baking pan, bake for 40 minutes instead of the listed 45 minutes.

My niece used to sell baked goods at local farmers markets, fairs, etc. She has been coming over for the last month or so with a whole bunch of her recipes, and we have been making them and photographing them to share with you.

I chose these PB&J bars to share first (we did a LOT of recipes) because they are easy to make and delicious. I mean really, really good. I am not a peanut butter and jelly fan, but I loved these. We used raspberry jam in the recipe photographed. For selling purposes, she used grape jelly because it is economical.

When telling me stories about how this-or-that recipe was received, I assumed these Peanut Butter and Jelly Bars went over better with children than adults. I assumed wrong. She said the adults would buy one, and the following week come back and buy two or three. That made me laugh out loud.

Now, since we are baking so many sweets and Hubby has been on a no-sugar kick for “us” since April, I keep one of each sweet for him, and one for me (forget our sharing, our love only extends so far) and that is our “cheat day.” The rest of the sweets my niece’s husband takes into work and shares with his coworkers. Her hubby has become super popular at work!! And, apparently, my niece has to make more to send in of these Peanut Butter and Jelly Bars as they were very well received.

Notes:

• The photos show PB&J bars made with raspberry jam. My niece usually used grape jelly. Blackberry (especially seedless) and blueberry jams are also excellent pairing choices.
• The recipe is made using an 8″x8″ baking pan. If using a 9″x9″ baking pan, bake for 25-27 minutes instead of the listed 30 minutes.

Ingredients:

1½ cups all-purpose Flour
½ tsp Baking Powder
1/8 tsp Salt
¾ cup smooth Peanut Butter
¾ cup Light Brown Sugar packed
½ cup unsalted Butter softened to room temperature
1 Egg
1 tsp Vanilla Extract
1 cup Jelly or Jam
2/3 cup Salted Peanuts, Chopped (optional)

Directions:

• Preheat oven to 350º.
• Lightly spray an 8″x8″ baking pan with non-stick spray. Place one sheet of parchment paper across the pan. Place a second sheet of parchment paper across the first sheet (to form an +). Set aside.
• Combine flour, baking powder and salt in a bowl; set aside.
