We will make the shredded barbecue pork for dinner one night, then have leftovers for lunch the next day. The rest of the barbecue pork is frozen and defrosted for pork sandwiches. You may have a different idea on using up all this fabulous tasting meat.

• You can freeze leftovers for later reheating. Just make certain you use freezer grade containers. Hubby buys them in giant packs, and we keep the extras down the basement. Our freezer sometimes looks like a frozen soup factory exploded in it. We freeze soup, stews, leftovers, garden vegetables, etc for later use all year long!

• You can use any commercially made barbecue sauce you like, any flavor you like. Sweet Baby Rays was used as people like sweet!

• You can use any commercially made root beer you like. As with all drinks, different root beers have different flavor botes – from sassafras (artificial these days) to vanilla tones to a more molasses-y flavor, not all root beers are created equal. Get what you like.

• Always consult your slow cooker directions as the times I have listed may cook slower or faster depending on your unit.

• Dice half of a medium-sized onion.
• Wash and pat try a 6 pound pork shoulder roast.
• Place the pork shoulder roast into a slow cooker.

This southern tomato pie is egg-free but the filling is simply delicious.


It is a terrific dish when your garden tomatoes are in season, or when you have a few extras that you purchased in the supermarket. The notes on this recipe are important, so please read them!

Southern Tomato Pie Notes:

• You can either use a store bought pie crust, or make your own pie crust. This recipe uses a store-bought pie crust. If you prefer to make your own pie crust versus ready-made, try this pie crust recipe. It is a bit sweet which is a nice contrast.

• You can use: green tomatoes for this recipe, red tomatoes, yellow tomatoes, orange tomatoes – a combination not only give this southern tomato pie different flavors but, it also makes a visual impact. However, there is no reason you cannot use all one type and color tomato.

• It is extremely important your tomatoes are fully dried by the paper towels. I cannot stress enough how important it is to fully dry out the tomatoes.

• After the first bake (10-15 minutes) the crust doesn’t need to be golden but should look cooked, with no raw spots.

Slow Cooker Recipe: Tex-Mex Chicken Stew

Tex-Mex is a blend of Mexican and American cuisines, deriving from the culinary creations of the Tejano people (literally it means Texas). Basically, it seems to be the Americanization of foods considered to be traditionally Mexican. There are whole schools of thought as to what makes something Tex-Mex versus Mexican cuisine – I just know both are very tasty, and I don’t sit around overthinking it.

Notes:

After shredding the chicken, taste the stew. If you feel it needs a bit more seasoning, add some chili seasoning and/or cumin. I found just the salsa, salt, and pepper was enough to season it well. This is just optional, and according to your taste.

This recipe uses 1 pound of chicken which is approximately three normal sized chicken breast. Sometimes you see the ones that look more like the size of a goose or turkey breast though, so go by weight, not by the number of chicken breasts.

This recipe will serve 4 without rice. If you make rice to go with the Tex-Mex chicken stew (recommended) this had 6 servings.
