Shortbread Cookie Recipe

This is a basic shortbread cookie recipe. It uses only 4-ingredients but is so rich as to be almost decadent. It will melt in your mouth. Cookie recipes do not get easier than this one!


Shortbread Cookie Recipe Notes:

If you form a large circle, you can do it inside a tart pan or without a pan. Make certain your cut your cookies before you bake!! This will allow them to come apart cleanly. You can use a square pan too, but again, cut before baking.

You do not have to make this as one large cookie. You can form or shape your shortbread into cookies, stamp them with a cookie press, use a cookie cutter, etc. The butter spreads though, so be aware of this.

• 16 tablespoons of butter = 1 cup of butter in the US = 2 sticks.

• For my UK and Australian friends: confectioners sugar is icing sugar (powdered sugar, 10x).

Shortbread Cookie Ingredients:

• 16 TBSP unsalted Butter, softened
• ¼ cup Confectioners Sugar
• 2 cups All-purpose Flour
• dash of Salt

• Spatula
Baking Sheet or Tart Pan or Springform Pan
• Rolling Pin
• Knife

Shortbread Cookie Directions:

• In a mixing bowl using a stand mixer, use the paddle mixer attachment to cream together 16 tablespoons of butter (2 sticks) and ¼ cup confectioners sugar.

• Gradually add flour mixture into butter mixture on low speed. It will eventually come together.

  1. I have never made shortbread cookies. Are they served just plain or do they get a garnish of some sort? (icing, sugar dusting etc)

    • Normally plain, Stephanie. I am quite sure there are recipes out with frosting and chocolate chips though. Try it plain first though. You may discover you like it without embellishments.

  3. can this shortbread also be used as a crust for a pie or tart, please?

    • While I have not tried it, Barbara, I think for a tart it would be marvelous. It would need to be a crust-only-gets-baked tart recipe though. And you may want to make it a bit thinner than it is as a cookie.
