Reuben Crescent Rolls Recipe

The Reuben sandwich is a hot American deli sandwich composed of corned beef, Swiss cheese, sauerkraut, and Russian dressing, grilled between slices of rye bread – some variations have Thousand Island dressing, mustard, or pastrami making up the traditional sandwich.

These days, the biggest difference between pastrami and corned beef is that pastrami is smoked after curing, and corned beef is not. Pastrami is usually cured with a dry rub, and corned beef with a brine. Brisket seems to be the most common cut of meat for both of them, although that was not always so. The main difference between Russian and Thousand Island dressings these days is the sweetness – Thousand Island dressing is sweeter. Historically, the dressings were nothing alike with classic Russian dressing being a tomato base with horseradish, and Thousand Island dressing is mayonnaise based with pickles or olives. Even though I say “historically nothing alike”, Thousand Island dressing is actually a variation of Russian dressing, and both have been used in the popular Rueben deli sandwich (and neither old-time recipe seems to be the same as what those dressings are today).

• Leftover corned beef can be used in place of deli luncheon meat – just make sure you slice it thin – shaved would be best!

• Pastrami can be substituted for corned beef

• Russian dressing may be substituted for thousand island dressing.

• Mustard can be added if desired

• Do not overload with dressing or mustard as the roll could become soggy.

• Preheat the oven to 350° degrees.
• Drain and rinse approximately 1/3 – ½ cup of sauerkraut. Set aside.
• Cut each slice of Swiss cheese in half; set aside.
• Line a baking sheet with parchment paper. Set aside.
• Open the package of crescent rolls and discard the packaging.
• Gently unroll each crescent roll.

Gruyère is a hard yellow cheese that originated in the cantons of Fribourg, Vaud, Neuchâtel, Jura, and Bern in Switzerland. It is named after the town of Gruyère. This is a sweeter cheese, with a touch of salt. For most people, the best comparison may be to Jarlsberg.

Mushroom Gruyère Triangle Tarts Notes:

• I have used 1 teaspoon of minced garlic in this recipe. If you like a less garlicky taste, use a bit less garlic, if you like things more garlicky, add more! The garlic portion is truly “to taste”.

• If you are not one to mince fresh garlic, buy it in a jar! It is located in either the Italian section, produce, or the condiment section of your local grocery store. While shelf-stable at purchase, once you open the jar it must be refrigerated.

• The “tarts” are definitely cheaters using crescent rolls. If you would like to make true tartlets or purchase premade tartlets, check your cooking temperature to make certain the top of the tartlet crust does not burn during the cooking time.

These Bacon Asparagus Tartlets are in the latter category. You can make them ahead of time and serve cold, you can bake them and hold in a warm oven, or you can serve hot (just allow to cool for a second or two so your guests do not burn their tongues on the hot cheese!).

• The bacon needs to be precooked.
• The asparagus in this recipe is not precooked. If you like a softer asparagus and want to sauté the asparagus for a bit to make it softer, allow it to cool down before using so it doesn’t cook the egg. You may be able to temper it, but cooling down would be easier.
• If you choose to go with raw asparagus, it will be firmer in these tartlets.

Ingredients:

½ cup Bacon
1/8 Onion
½ cup Asparagus, fresh
½ cup Cheddar, shredded
3 Eggs
1 tsp Italian Herb Seasoning
1 tsp Garlic, minced
Salt, to taste
Pepper, to taste
18 Mini Tartlet Shells

Directions:

• Preheat oven to 350°.
• Precook your bacon if you have not purchased precooked.
• Drain grease from bacon, cool slightly, dice bacon into small pieces.
• Dice onion into small pieces.
• Dice asparagus into very small pieces.
• Combine the diced bacon, onion, asparagus and cheddar in a bowl. Combine well.
• Add the eggs, Italian herb seasoning, garlic, and salt and pepper to taste. Mix to combine.
• Arrange the tartlet shells on a parchment-lined baking sheet.
• Fill tartlets, dividing the filling evenly between all the tart shells.
• Bake in the oven for 12 – 15 minutes or until the tops of the tarts are golden brown
• Remove from the oven and let cool slightly before serving.
