Notes:

• This serves two. To make servings for four double the recipe. For serving six, triple the recipe, and for serving eight, quadruple the recipe.

• The garlic is quite pungent if you are crushing or mincing garlic from a clove. If you use bottled minced garlic, it is not as powerful. Keep that in mind if you are a garlic lover, or if a little garlic goes a long way.

• Deseeding the tomato is recommended if you dislike seeds or have something other than a Roma tomato.

• If you want to use bone-in chicken breasts. Remove the skin (save it for chicken bone broth), and make the Easy Bruschetta Chicken Recipe as directed below. The fact that it has the bone in makes a world of difference in the flavor – it actually intensifies the flavor of the chicken, cooking it on the bone. Bone-in chicken breasts also tend to be less expensive than boneless chicken breast at the meat counter.

• 1 Tomato, large

Easy Bruschetta Chicken Directions:

• Preheat oven to 350°.
• Lightly coat a baking dish with non-stick cooking spray. Set aside.
• Season the chicken breasts with salt and pepper to taste.
• Mix the minced garlic with the oil. Brush the mixture on the two chicken breasts, divide evenly between the two breasts.

3 Basil leaves, fresh, sliced very thinly
2 tsp Balsamic Vinegar
